Ingredients for vegan sushi:
- 2 cups sushi rice
- 4 nori seaweed sheets
- Various vegetables of your choice (e.g. avocado, cucumber, pepper, carrot, radish)
- Tofu or tempeh cut into thin strips
- Soy sauce for serving
- Wasabi and pickled ginger for serving
- Chipeño sauce for dipping
Preparation of the sushi:
- Cook the sushi rice according to the instructions on the package and let it cool.
- Place the nori seaweed sheets on a sushi mat and spread a thin layer of rice evenly on top, leaving about 1 cm free at one end.
- Place the vegetables and tofu or tempeh in thin strips on top of the rice.
- Roll up the nori seaweed sheet tightly using the sushi mat and seal the free end with a little water.
- Using a sharp knife, cut the sushi roll into slices about 1.5 cm thick.
Serve:
- Arrange the vegan sushi rolls on a plate and serve with soy sauce, wasabi and pickled ginger.
