Spicy Sushi Role, Chipeño style

Ingredients for vegan sushi:

  • 2 cups sushi rice
  • 4 nori seaweed sheets
  • Various vegetables of your choice (e.g. avocado, cucumber, pepper, carrot, radish)
  • Tofu or tempeh cut into thin strips
  • Soy sauce for serving
  • Wasabi and pickled ginger for serving
  • Chipeño sauce for dipping

Preparation of the sushi:

  1. Cook the sushi rice according to the instructions on the package and let it cool.
  2. Place the nori seaweed sheets on a sushi mat and spread a thin layer of rice evenly on top, leaving about 1 cm free at one end.
  3. Place the vegetables and tofu or tempeh in thin strips on top of the rice.
  4. Roll up the nori seaweed sheet tightly using the sushi mat and seal the free end with a little water.
  5. Using a sharp knife, cut the sushi roll into slices about 1.5 cm thick.

Serve:

  • Arrange the vegan sushi rolls on a plate and serve with soy sauce, wasabi and pickled ginger.
  • Serve the chipeño sauce as a dip next to the sushi rolls.
